This bar started out as a handful of organic Criollio cocoa beans from the foothills of the Andes Mountains and the lush forests of the Peruvian Amazon. The beans make their way to the U.K. where I roast, winnow, stone-grind, temper and mould them in a process taking more than 72 hours. The result is a fantastic, dark bar of chocolate with notes of berries and raisin.


The cocoa beans from Peru are sourced from small holders who rely on the cocoa crop as their main source of income. As a prominent Fine Flavour region, Peruvian cocoa farmers can expect to be paid higher prices for their crops than farmers growing cocoa for industry.
